
The first time I made Italian Wedding Soup was a monumental occasion, because it was the day of my oldest daughter’s wedding. I was overjoyed that day, because I was able to have Ray’s family and my new son-in-law’s family over for meals and pictures before the wedding. The timing was amazing. Only 2 weeks before that special day, we were finally able to move into a beautiful rental home after our family of “Seven Salgados” had lived in our motor home and a trailer for 8 months. I was so thankful to have the space to accommodate everyone, and a beautiful yard to take the pre-wedding pictures!
After our breakfast of tamales with Ray’s family, I remember my sister-in-law, Rose, helping me shape the pasta for the soup that I was going to serve to the Wedding Party during the photo shoot later that day.

The soup was a hit, and became a family favorite. A few years later, I created my own version of Italian Wedding Soup, adapted from “The Barefoot Contessa” recipe I used in 2011 on the wedding day of our first born child.
